This creamy eggnog is dairy-free – enjoy it as is for the whole family or spike it with bourbon or rum for the grown-ups!
- 4 egg yolks
- 1 teaspoon vanilla extract
- 1/3 cup maple syrup
- 2 cups KOITA Organic Almond Milk
- 1 can full-fat organic coconut milk
- 1 teaspoon apple pie spice, cinnamon, nutmeg or any combination you like
STEP 1: BLEND EGGS WITH SYRUP.
Add egg yolks, vanilla extract and maple syrup to a blender. Blend until foamy.
STEP 2: HEAT MILK & SPICES TOGETHER.
Warm KOITA Organic Almond Milk and the full can of coconut milk in a saucepan over medium heat with your choice of spices. This step infuses the milk blend with the spices.
STEP 3: SLOWLY ADD MILK TO THE BLENDER.
Remove the fill cap of the blender and slowly pour the warm milk into the egg mixture while the blender is running slowly.
STEP 4: THICKEN THE EGGNOG ON THE STOVE.
Pour the contents of the blender back into the saucepan and heat it over medium heat to allow it to thicken. Stir constantly while heating.
STEP 5: ADD YOUR CHOICE OF SPIRIT. (OPTIONAL)
Stir in bourbon or rum, if using.
